- 2 slices bread, toasted
- 4 tablespoons hummus
- 1 Persian cucumber
- 1/2 cup cherry tomatoes, chopped
- 1/3 cup olives, chopped
- 2 tablespoons fresh parsley, chopped
- Squeeze of lemon juice

1. Toast up your bread: Either in the toaster or toaster oven.
2. Spread on the hummus: Next, spread on your desired amount of hummus.
3. Sprinkle on the toppings: chopped cucumber, chopped tomatoes, chopped olives, chopped fresh parsley, squeeze of lemon juice, salt and freshly-cracked black pepper.
