Hummus Toast

serving size 1


  • 2 slices bread, toasted
  • 4 tablespoons hummus 
  • 1 Persian cucumber 
  • 1/2 cup cherry tomatoes, chopped 
  • 1/3 cup olives, chopped 
  • 2 tablespoons fresh parsley, chopped
  • Squeeze of lemon juice 
  • salt and pepper to taste 



  1. 1. Toast up your bread: Either in the toaster or toaster oven.

  2. 2. Spread on the hummus: Next, spread on your desired amount of hummus.

  3. 3. Sprinkle on the toppings: chopped cucumber, chopped tomatoes, chopped olives, chopped fresh parsley, squeeze of lemon juice, salt and freshly-cracked black pepper.

  4. 4. Enjoy!
